On October 3, 2013, my amazing grandparents celebrated their 60th wedding anniversary. As I researched the 60th anniversary, I realized that it was “the diamond anniversary”. It makes perfect sense, as people always say that diamonds are forever, and in my opinion, 60 years is forever. Or at least about as forever as you can get in this day and age.
Being able to celebrate with my grandparents was such a beautiful honour. Their marriage is one of the strongest I know, directed by a love for God and governed by an unconditional love for each other. After sixty years of being married, they still wake up beside each other, laugh with each other, help each other through times of illness, and pray for each other. Their example is inspiring, as I can only hope to be blessed with a marriage such as theirs one day.
I made these diamond cookies in honour of my incredible grandparents. I packaged them in plastic bags adorned with a black ribbon and a sparkly silver tag so they could be handed out to our extended family after a celebratory dinner. I added a bit of edible metallic dusting powder to the white icing to give the diamonds a little bit of shine.
Beyond the excitement of celebrating such a huge milestone with my grandparents, making these cookies was also such a treat because it was my first time attempting Chocolate Sugar Cookies. They have been on my radar for well over a year, but due to the fact that I generally only make sugar cookies when someone orders them, I have never had the chance to experiment. I thought they would be appropriate for this occasion, as the dark colour made the white icing really stand out. I am happy to announce that they also taste delicious! I am really excited to offer them to different clients now that they have been tested and tried, as they offer the same great taste as sugar cookies, only with a little chocolate flavour. Mmm!
I am so blessed to have two amazing grandparents whose love for each other makes such an impact on all those they meet. Thanks for being such a wonderful example to all, Grandma and Grandpa. I love you both so much!
